Baked Apples

When I wrote this recipe in 2020, the pandemic was just beginning and a lot of us found ourselves wanting to bake comfort food, but the stores were out of flour, eggs, and so much else. I wrote this recipe to provide a comforting dish for those wanting something delicious that didn’t require flour or eggs. These baked apples taste just like apple pie, without the fuss of peeling the apples.
Makes 4 Baked Apples
Ingredients:
4 Large Apples of Your Choice (I used Honeycrisp)
¼ Cup (56g) Softened Unsalted Butter
½ Cup (100g) Brown Sugar
1 Tsp (3g) Ground Cinnamon
½ Tsp (1g) Ground Allspice
¼ Tsp (1g) Salt
¾ Cup (180mL) Water
Directions:
1. Preheat your oven to 375 Degrees F (190C) and pour the water in a 8x8 inch baking dish.
2. Cut out the cores of the apples, set aside.
3. In a bowl, combine the butter, brown sugar, cinnamon, allspice, and salt with a hand mixer or spoon, and stuff the cores of the apples with the mixture.
4. Place them in the dish with water and bake for around 60 minutes, or until the apples are soft. Allow to cool for 10 minutes before serving on their own or with vanilla ice cream.
-Store wrapped with plastic wrap in the fridge for up to 3 days.
