This is one of those recipes that comes together so quickly because it requires so little. There was a point in time where I was trying to come up with foods that felt like dessert but were on the healthier side, and that’s how this recipe was born! That is exactly why I love these banana bars!

Yield: 9 Banana Bars

 Ingredients:

6 Large Ripe Bananas, Mashed

¼ Tsp (1g) Salt 

4 cups (320g) Oats 

1 Cup (252g) Creamy Peanut Butter or Almond Butter

Optional: 3/4 Cup (168g) Semisweet Chocolate Chips 

 

Directions:

1.     Preheat your oven to 350 Degrees F (180C) and grease an 8x8 inch baking dish with cooking spray, line it with parchment, and grease the parchment. 

2.     In a large bowl, add all of the ingredients, except for the chocolate chips if you’re using them. Use a silicone spatula to stir the mixture together until well combined, then add in the chocolate chips.

3.     Pour the mixture into the prepared dish, smooth out the top to make sure the thickness is even all around, and bake for 22-25 minutes, or until light golden brown on top and slightly firm to the touch. Allow to cool for 20 minutes before cutting and eating. 

-Store in an airtight container at room temperature for up to 4 days. 

-These banana bars make great healthy snacks for people of all ages!

-You can get creative with these banana bars by adding cinnamon, other spices, nuts, raisins, etc to them!
