Bananas Foster Waffles
A completely elevated waffle experience
A special breakfast doesn’t have to be complicated or time consuming. These bananas foster waffles are impressive but still easy and not time consuming to make!

Ingredients:
For the waffles:
2 Cups (240g) All Purpose Flour
¼ Tsp (1g) Salt
2 Tbs (30g) Granulated Sugar
1 Tsp (4g) Ground Cinnamon
4 Tsp (16g) Baking Powder
1 ¾ Cup (420mL) Milk (can be dairy free)
½ Cup (120mL) Vegetable Oil (coconut oil is fine too)
1 Tsp (4g) Vanilla Extract
2 Large Eggs, Separated
For the Bananas Foster
½ Cup (100g) Brown Sugar, Packed
¼ Tsp (1g) Salt
½ Tsp (2g) Ground Cinnamon
1 Tsp (4g) Vanilla Extract
4 Tbs (56g) Unsalted Butter
½ Cup (65g) Chopped Pecans
2 Bananas, Peeled and Sliced
3 Tbs (50mL) Dark Rum
Directions:
1. In a large bowl, whisk the flour, salt, sugar, cinnamon, and baking powder together, set aside.
2. In a separate bowl, whisk the milk, oil, vanilla, and egg yolks together.
3. In a separate bowl, beat the egg whites until stiff and foamy, about 3 minutes.
4. Add the wet mixture to the dry mixture and mix until just combined, then gently fold in the egg whites.
5. Cook in a preheated waffle iron according to the manufacturer instructions, usually 2-3 minutes per waffle.
6. Place all the cooked waffles on a sheet pan lined with parchment paper and set in the oven at 250 Degrees F (120C) to keep warm while you make the bananas foster.
7. In a large skillet or sauté pan, add the brown sugar, salt, cinnamon, vanilla, butter, pecans and bananas and cook over a medium heat, stirring occasionally, until caramelized and bubbling, about 5 minutes.
8. Off the heat, add the rum and use a torch or long lighter to set it ablaze, being sure to shake the pan around to flambee it. Do this until the flame disappears. If you don’t want to flambee this, you can add the rum with the rest of the ingredients and just cook it on the stove.
9. Top the waffles with the bananas foster!
