Brown Butter Waffles

You thought regular waffles were good

 I am always looking for ways to update and improve my breakfast recipes since it is my favorite meal of the day. Using brown butter in recipes really takes them to the next level with its caramelized and nutty flavor it provides. Using it in this waffle recipe was definitely a good idea!

This recipe serves around 4-5 people

Ingredients:

2 Cups (240g) All Purpose Flour

3 Tbs (36g) Granulated Sugar

4 Tsp (16g) Baking Powder

½ Tsp (1g) Cinnamon

½ Tsp (less than 1g) Nutmeg

½ Tsp (1g) Salt

½ Cup (1 Stick, 113g) Brown Butter (see directions)

1 ¾ Cup (437mL) Milk 

1 Tsp (4g) Vanilla Extract

2 Large Room Temperature Eggs, Separated

Directions:

1.     First, make the brown butter. To do this, simply put the butter in a saucepot over medium heat and melt it. Continue to cook it until it starts to bubble, then turn the heat to a medium-low. The butter will eventually foam, then start to darken in color. Be sure to keep an eye on it as it can burn quickly after the foam starts to subside. You’ll see dark bits at the bottom of the pan, and when you swirl the butter in the pan, it should be a golden-brown color. Remove from the heat and allow to cool to room temperature before using. 

2.     In a large bowl, combine the flour, sugar, baking powder, cinnamon, nutmeg and salt. 

3.     In a separate bowl or large measuring cup, combine the milk, vanilla and egg yolks. Pour this mixture into the flour mixture and add the brown butter as well. Whisk gently until the batter just comes together. 

4.     Put the egg whites in a separate bowl and use a whisk or hand mixer to beat them until stiff foamy peaks form, then fold them into the batter with a spatula. 

5.     Preheat a waffle iron and grease it with cooking spray, then add the batter (the amount will vary depending on the size of your waffle maker) and cook according to the directions, usually about 2-3 minutes or until golden brown.
