Cocoa Krispy Brownies

Some of the best brownies I’ve ever had.

I used to love Cocoa Crispies as a kid. They were definitely up there with my favorite cereals, and even now I still like to treat myself to a box. Incorporating them into brownies was something I have never thought about but am so glad I did now, because these brownies are out of this world! 

 This recipe makes an 8x8-inch dish, about 12 brownies. 

 Ingredients:

½ Cup (50g) Cocoa Powder

¾ Cup (90g) All Purpose Flour

¾ Cup (150g) Granulated Sugar

½ Cup (100g) Brown Sugar

½ Tsp (1g) Salt 

¼ Tsp Baking Powder

1 Cup Cocoa Krispies (42g), Crushed

4 Large Eggs, Room Temperature

2/3 Cup (158mL) Vegetable Oil

2 Tsp (9g) Vanilla Extract

1 Cup (42g) Whole Cocoa Krispies

 Directions:

1.     Preheat oven to 350 Degrees F (180C) and grease an 8x8-inch baking dish with cooking spray. Line the dish with parchment and spray the parchment. 

2.     In a large bowl, combine the cocoa powder, flour, sugar, brown sugar, salt, baking powder and ground cereal with a whisk. 

3.     Add the eggs, oil and vanilla and whisk until combined. Continue whisking the batter for another minute or so to develop a little gluten in the flour so the brownies have a nice chew to them. 

4.     Use a spatula to fold in the whole Cocoa Krispies, then pour the batter into the prepared dish and bake for 30-35 minutes or until set. 

5.     Once out of the oven, allow to cool for 10 minutes then refrigerate for 1 half hour. This creates a fudgy texture in the brownies and helps them keep their shape when you cut them.
