Devils Food Pancakes
Breakfast just got more chocolatey.
I have a thing for breakfast. Aside from being my favorite meal of the day, I think it has great importance since it can set the tone for your day. If you start the day with something amazing, exciting and delicious, you’ll carry that through your day! Granted, a lot of us want healthy starts to the day, but there are always those days where a sweet breakfast is welcome and might I say overdue. These devil’s food pancakes make all your chocolate dreams come true!
This recipe serves 4 people
Ingredients:
1 Cup (150g) All-Purpose Flour
1/3 Cup (28g) Unsweetened Cocoa Powder
3 Tbs (45g) Granulated Sugar or Sugar Replacement such as Stevia
1 Tsp (3g) Baking Powder
¾ Tsp (4g) Baking Soda
¼ (1g) Tsp Salt
1 ½ Cups (308g, 355mL) Buttermilk
1 Large Egg (around 52g)
1 ½ Tsp (6g) Vanilla Extract
3 Tbs (37g) Vegetable Oil
Optional Chocolate Chips
Directions:
1. In a large bowl, combine the flour, cocoa, sugar, baking powder, baking soda and salt and set aside. In a separate bowl or large liquid measuring cup, combine the buttermilk, egg, vanilla and oil.
2. Add the wet mixture to the dry mixture and gently whisk until barely combined, some lumps will remain. Cover with plastic wrap and refrigerate for 10 minutes.
3. Preheat a griddle to 350 Degrees F (175 C) or heat a large skillet over medium heat with 1 ½ Tbs butter in it, until the butter is bubbly but not brown.
4. Use ¼ cup of batter per pancake and sprinkle chocolate chips on top if desired. Cook for 2-3 minutes or until the edges turn pale and bubbles start to appear on the tops of the pancakes. Flip and cook for another 2-3 minutes until cooked through.
Top with maple syrup if desired. Store wrapped in plastic wrap in the refrigerator for up to 4 days. You can heat these up in the microwave or the toaster!
