Everything Bagel Muffins

Im a huge everything bagel and cream cheese guy. I wanted to find another way to enjoy the flavors, and thought muffins would be perfect! These muffins use lots of everything bagel seasoning and have a surprise cream cheese center! This is a very easy recipe to put together and can be multiplied if you want to make a lot!
Makes 12 Muffins
Total Time: 30 Minutes
Ingredients:
2 Cups (240g) All Purpose Flour
1 Tbs (13g) Baking Powder
¾ Cup (150g) Granulated Sugar
5 Tbs (45g) Everything Bagel Seasoning
1 Cup (240mL) Whole Milk
¼ Cup (60mL) Vegetable Oil
1 Large Egg
12 Tbs (168g) Cream Cheese
Directions:
1. Preheat your oven to 400 Degrees F (205 C) and line a muffin pan with paper liners. Spray the top of the pan with cooking spray.
2. In a large bowl, add the flour, baking powder, sugar, and everything bagel seasoning and whisk until well combined.
3. Add the milk, oil, and egg and stir with a silicone spatula until the batter comes together. It will be thick.
4. Put 1 Tablespoon of batter in the bottom of each muffin liner, using a toothpick to spread it evenly around the bottom to cover it. Add 1 tbs of cream cheese to each muffin, then evenly distribute the rest of the batter amongst the muffin pan, using a toothpick to spread the batter around to make sure the cream cheese is covered. Tap the pan on the counter a few times to release any air bubbles. Optionally sprinkle some flakey sea salt on top of each muffin.
5. Bake for 22-24 minutes, until light golden brown on top and the muffins spring back when lightly touched. Allow to cool for 10 minutes before enjoying.
-Since these have cream cheese in the middle, they’re best off kept in the fridge in an airtight container. You can leave them at room temperature for about 4 hours or so if you’re serving them the day you make them. If you can’t find everything bagel seasoning at the store, you can make your own!
What you’ll need:
2 Tbs Coarse Sea Salt
2 Tbs Granulated Chopped Garlic
2 Tbs Granulated Chopped Onion
2 Tbs Sesame Seeds
2 Tbs Poppyseeds
I love to make large batches of this to keep in the pantry. It’ll keep fresh in an airtight container for several months!
