Gingerbread Waffles

Warm and spicy

In my opinion, it just isn’t holiday season without gingerbread waffles. These waffles are lovely, warm, spicy, fluffy, and delicious! This recipe makes a lot so it’s perfect to make for any holiday gathering, and come on, who doesn’t love a breakfast party?!

This recipe makes around 8 waffles

Ingredients:

2 Cups (240g) All Purpose Flour

2 Tbs (30g) Granulated Sugar 

4 Tsp (16g) Baking Powder

1 ½ Tsp (5g) Ground Cinnamon

¾ Tsp (2g) Ground Nutmeg

½ Tsp (1g) Ground Cloves 

1 Tsp (3g) Ground Ginger

½ Tsp (2g) Salt 

1 ¾ Cup (420mL) Milk

½ Cup (120mL) Vegetable Oil

2 Tsp (8g) Vanilla Extract

1/3 Cup (80mL) Molasses

2 Large Room Temperature Eggs, Separated

Directions:

1.     In a large bowl, combine all the dry ingredients. In a separate large measuring cup or bowl, combine the milk, oil, vanilla, molasses, and just the yolks from the eggs. 

2.     Add the wet ingredients to the dry, and whisk until combined. In a separate bowl, beat the egg whites until they reach stiff foamy peaks, and fold them into the batter. 

3.     Preheat your waffle maker, and ladle in the batter. Cook according to the manufacturer instructions, which should be around 2-3 minutes. Top with maple syrup and whipped cream if desired. (I like to sprinkle a little cinnamon on top of mine).
