No Bake Cookies
Who knew you could make cookies without an oven?
Baking is such a passion of mine, but sometimes you want a dessert that doesn’t require the oven. I thought a no bake cookie would be the perfect way to enjoy some sweetness without heating the kitchen up.
This recipe makes around 12 cookies.
Ingredients:
¾ Cup Creamy Peanut Butter
1 Cup White Chocolate Chips
1 Cup Quick Cooking Oats
¼ Tsp Salt
¾ Cup Chopped Pretzels
½ Cup Chopped Almonds or Peanuts
Directions:
1. In a heatproof bowl over a pot of simmering water, add the peanut butter and white chocolate chips and stir occasionally until melted and combined.
2. Off the heat, add the oats, salt, pretzels and chopped nuts.
3. Use either a small spoon or a 2-inch ice cream scoop to scoop the mixture, roll it into balls and place on a sheet with parchment.
4. Gently press down each one to flatten a bit, then allow to set for about 30 minutes in the fridge.
Store in an airtight container in the refrigerator for up to a week.
